Grown in the highlands of Chiapas, Mexico, this washed SHG lot showcases the bright mountain terroir and careful processing that the region is known for. This coffee reflects Chiapas’s combination of rich soils and steady, elevated growing conditions that give clarity and depth to the cup.
We bring this to an early dark roast and develop sweetness while preserving underlying balance. In the cup expect rich dark chocolate at the center, layered with granola-like warmth and roasted almond character that carries through a smooth, grounded finish.
