This one’s a little different in the best way. Grown at Finca Idealista and processed by Benjamin Weiner, this Yellow Pacamara goes through a carbonic maceration double fermentation with the addition of lavender flowers. It’s a wild process, but the cup stays surprisingly clean and expressive. You’ll get soft floral lavender notes right up front, followed by bright lychee sweetness and a juicy yellow peach finish. It’s layered, aromatic, and super unique without being overwhelming.

Roasted light to keep the florals lifted and the fruit crisp.
